Rosmarinus officinalis

One of the most useful culinary herbs used in cooking. It combines well with meat, especially Lamb Pork and Chicken. Rosemary is incorporated a lot in Mediterranean cooking and should be used sparingly because of its strong flavour.

Use as seasoning, in dressing, marinade, and for roasting or grilling of meat & vegetables.

Facts

Due to the fact that Rosemary leaves contain a lot of natural oil, it is one of the few herbs that dries really well, and can be used fresh or dry in cooking with equal results.

Nutrition and health benefits

Rosemary is exceptionally rich in many of the B-complex group of vitamins, such as folic acid, which is often used by expectant mothers.  It has strong anti-inflammatory and antiseptic properties, and aids poor circulation if rubbed into an effected joint.
